Procedure 1: Pita Bread
1. Mix low carb flour, soda and baking powder and knead into a soft dough. Keep kneading for 5 minutes.
2. Cover and keep aside for half an hour.
3. Divide into 2 balls, roll into small circles and fold like a potli.
4. Roll again into full size keeping them a little thicker than chapatis.
5. Now cook them as chapatis on a tawa and keep aside. You can use a cloth to puff the breads.
Procedure 2: Humus
1. Add chole, cloves, lemon juice, sesame seeds, salt and jeera powder in a blender and blend till creamy.
2. Remove and keep aside.
Procedure 3: Sauted vegetables
1. Heat 2 ml oil in a pan, add all the vegetables and salt.
2. Sauté for 4-5 mins on medium flame.
3. Add the spices, mix well and keep aside.
Procedure 4: Assembling
1. Take 1 pita bread and cut in halves.
2. Open 1 half of the pita bread, place some salad in it.
3. Top it with some humus and extra seasoning if required.
4. Serve hot with humus, salsa or choice of sauces.
Outcome:
Soft bread with a crunchy filling and burst of flavours.
Shelf Life:
You can store humus for a day in the refrigerator . Add olive oil to the humus if required to store for a longer time.
Storage Instructions:
Bread and sauted vegetables should not be stored. Store humus in an airtight container. Refrigeration is required.
Additional Info:
- Wheat flour and soya flour can be used instead of low carb flour.
- Cheese can be added for extra taste.
