Pre Prep Stage: Making Dough
- Mix all the above ingredients and make a soft dough.
- Cover it with a lid and let it rest for 10-15 minutes.
Procedure: Making Filling
- Meanwhile strain the soaked urad dal and in a pan heat oil.
- Now add jeera, dalchini and other spices along with strained urad dal.
- Mix all the spices except cashews and raisins on a low medium flame and cook until all the water in the dal dries up.
- Now add cashews and cook for 1-2 minutes.
- Transfer the filling to a bowl or plate and cool it.
- Then grind the dal filling in a mixer and make a meal with coarse texture.
- Now add raisins if you want.
Procedure: Making Raw Kachori
- After 15 minutes again knead the dough and divide it into equal pieces of lemon size.
- Then make small flat roti using a rolling pin add the prepared filling.
- Make pleats and secure the filling them tightly.
- Now roll into kachoris and ensure the filling doesn’t come out. Repeat this to make more kachoris.
Procedure: Cooking Kachori
- Now set the air fryer at 160 degree centigrade and keep 3-4 kachoris for 6 minutes.
- Now flip them and keep them again for 4 minutes. Time can vary by few minutes depending on the type of air fryer.
Garnish them with onion, curd, nylon sev, green mint chutney, imli chutney or anything of your choice. You can simply have it with tea also.

Shelf Life:
- Kachoris can last for 8-10 days in refrigerator.
- You can also store the dough and filling for 2-3 days in refrigerator to make more the next day.
Storage Instructions:
Refrigerate the extra kachoris and enjoy them as snack with tea, coffee, juice or with curd and spices.
Additional Info:
- You can add potato or paneer as stuffing instead of dal but the shelf life of these kachoris will be reduced.
- You can replace defatted soya flour with fine soya chunks powder.
