Ingredients: Defatted Soya Uttapam

Rava | 60 g | Carrot (finely chopped) | 25 g |

Water | 1/2 cup or as per consistency | Onion (finely chopped) | 25 g |
Baking Soda | 1/4 tsp | Green Chillies (finely chopped) | 1-2 pieces |
Jeera | 1 tsp | Fresh Coriander (finely chopped) | 1/2 cup |
Pre Prep Stage: Making Batter
- Mix defatted soya flour, rava, curd, salt and water to make a thick batter (not free flowing).
- Keep it aside for 10 minutes.
- After 10 minutes, add jeera, green chillies and baking soda in the batter and mix it thoroughly.
Procedure: Making Uttapam
- Once the batter is ready, heat a non stick tava and grease it with some ghee or butter or oil and then wipe it with a soft cloth.
- Now add few drops of water and wipe it again.
- Once the tava is sufficiently hot, pour the batter and spread it evenly.
- Thickness can be adjusted as per your preference.
- Now one by one add the veggies and coriander leaves and sprinkle chaat masala and press them gently.
- Once the upper surface of the uttapam dries it will start separating from the sides.
- Now flip it and cook the other side for 1-2 minutes and then remove it.
Outcome:
Light brown, Crispy, Sweet spicy taste, Sweet aroma.
Shelf Life:
Batter can easily last for 1-2 days in refrigerator.
Storage Instructions:
You can refrigerate (not Freeze) the extra batter and make piping hot vegetable uttapams as and when you need them.
Additional Info:
- You can add all the veggies in the batter itself and make uttappam like pancakes for kids as they cringe seeing veggies on top.
- You can replace defatted soya flour with fine soya chunks powder.
